Ingredients:
3 eggs 2 cups chocolate chips
3 medium avocados 1 cup sugar
1/2 cup cocoa powder 1/4 cup butter
1/4 cup water 1 1/2 tbls coconut flour
1 tbls vanilla 1 tsp coffee extract, optional
1/2 tsp baking soda 1/2 tsp salt
Method:
Preheat oven to 350 degrees. Process flesh of avocados in blender or food processor with eggs, the eggs will make them able to blend and not get stuck. Heat water, sweetener, butter, and extracts in a pan. Add chocolate chips; turn off heat; let melt. Remove from stove and add remaining ingredients, mixing well. Bake for 30-35 minutes, until firm and lightly cracked on the surface.
Yield: 16 large or 20 small brownies

3 medium Index Fresh avocados (ripe), halved, seeded and peeled
½ cup honey
1 Tbsp vanilla extract
2 Tbsp coconut oil soft or melted
Place all ingredients in a food processor and blend until smooth. Pour the mixture into an airtight container. Freeze for at least 4 hours.
Makes 1 pint.

Ingredients:
2 jumbo avocados 2 large cloves of fresh garlic
1-2 cups fresh basil leaves 1/2 cup roasted pumpkin seeds
1/3 cup of grated parmesan Salt & pepper (to taste)
Juice from 1 small lemon 1/2 - 1 cup of grapeseed oil
(You can use any nut or seed you choose)
Place the first 7 ingredients in food processor, cover and set to non-stop setting.
Slowly stream grapeseed oil in until the desired consistency.
When done, mix in with your choice of freshly cooked hot pasta so the heat from the pasta will heat up the pesto.
Serve, sprinkle diced sun dried tomatoes and shaved parmesan on top. Enjoy!
**Sauce is also great on sandwiches and as a salad dressing.

Ingredients:
CAKE:
3 (1¼ cup) IndexFresh avocados, mashed (see note)
4 eggs
1 cup honey
1 cup unsweetened cocoa powder
1 cup almond flour
1½ teaspoons vanilla
¾ teaspoon baking soda
½ teaspoon salt
FROSTING:
2 (¾ cup) IndexFresh avocados, mashed (see note)
½ cup honey
½ cup unsweetened cocoa powder
2 tablespoons coconut oil
Method:
Cake: Preheat oven to 350 F. Blend all cake ingredients in a food processor until smooth. Bake in a spray-coated 9-inch cake pan for 25-35 minutes until done. Cool completely before adding frosting.
Frosting: Blend all ingredients until smooth. Chill at least 30 minutes before spreading on cake.
Makes 6 to 8 servings. Note: Use medium-ripe avocados for best results.

2 tbsp. fresh lime juice
1/4 tsp. salt
1 ripe avocado - peeled, pitted, and sliced
1/2 cup chopped tomato
4 green leaf lettuce leaves
4 (8-inch) fat-free flour tortillas (Can eliminate for a low carb option, wrap with lettuce leaves)
2 cups shredded skinless, boneless cooked chicken (about 8 ounces)
Method:
Place first 3 ingredients in a medium bowl; mash with a fork until smooth. Stir in tomato. Place 1 lettuce leaf on each tortilla; spread about 1/4 cup of the avocado guacamole mixture on each lettuce leaf. Top each serving with 1/2 cup cooked chicken. Roll up. Wrap in foil or parchment paper; chill.

Ingredients:
½ large avocado
¼ cup butter -softened (room temp.)
2 cloves garlic, crushed
1 small chili pepper, finely chopped
½ small white onion, diced
1 tbsp fresh lime juice
freshly ground black or cayenne pepper
¼ tsp salt or more to taste
1-2 tbsp freshly chopped cilantro
4 large slices bacon
Method: Preheat the oven to 190 C / 375 F. Line a baking tray with baking paper. Lay the bacon strips out flat on the baking paper. Place the tray in the oven and cook for about 10-15 minutes until golden brown. When done, remove from the oven and set aside to cool down.
Half, deseed and peel the avocado. Place the avocado, butter, chili pepper, crushed garlic, cilantro and lime juice into a bowl and season with salt and pepper. Mash until well combined. Add the diced onion and mix well. Cover with foil and place in the fridge for 20-30 minutes.
Cut the bacon into small pieces and place in a plate. Remove the guacamole from the fridge and start creating 6 balls. Roll each ball in the bacon crumbles and place on a tray.
Refrigerate when complete if not serving immediately.
